Tortilla Chips

Prepare the Tortillas
Cut each corn tortilla into 6 triangle-shaped pieces to form chips.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla pieces in batches to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt to taste.

Combine Ingredients
In a large mixing bowl, combine the diced tomatoes, chopped onion, chopped cilantro, minced jalapeño, lime juice, and salt.

Mix Well
Stir all the ingredients together until well combined. Taste and adjust seasoning if necessary.

Chill
Cover the bowl with plastic wrap and let the salsa sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
