For the Chile Rellenos

For Serving

Method

Preparing the Chile Rellenos

  1. 1

    Roasting the Peppers

Preheat your oven to 450°F (230°C). Place the poblano peppers on a baking sheet and roast them in the oven for about 20-25 minutes, turning occasionally, until the skins are blistered and charred.

  2. 2

    Cooling and Peeling

Remove the peppers from the oven and place them in a bowl covered with plastic wrap to steam for about 10 minutes. Once cooled, peel off the charred skin, make a slit down the side of each pepper, and remove the seeds.

  3. 3

    Filling the Peppers

Stuff each pepper with Monterey Jack cheese, ensuring they are filled generously. Set aside.

Making the Batter

  1. 4

    Preparing the Batter

In a mixing bowl, beat the egg whites until stiff peaks form. In another bowl, whisk together the egg yolks, flour, baking powder, salt, and black pepper until smooth. Gently fold the egg whites into the yolk mixture until combined.

Cooking the Chile Rellenos

  1. 5

    Frying

Heat vegetable oil in a large skillet over medium heat. Dip each stuffed pepper into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry until golden brown on all sides, about 5-7 minutes. Remove and drain on paper towels.

Preparing the Tomato Sauce

  1. 6

    Making the Sauce

In a saucepan, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute. Add tomatoes, salt, and pepper; let simmer for 10-15 minutes until thickened. Stir in lime juice and chopped cilantro before removing from heat.

Serving

  1. 7

    Plating the Dish

On a plate, place two fried chile rellenos, pour tomato sauce over them, and add a dollop of sour cream on the side. Garnish with sliced avocado.
