Method
Preparing the Chile Rellenos

Roast the Peppers
Preheat your oven to 425°F (220°C). Place the poblano peppers on a baking sheet and roast for about 20 minutes, turning occasionally, until the skin is charred and blistered.

Peel and Stuff
Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap for 10 minutes to steam. Once cooled, peel off the skin, make a slit down the side, and remove the seeds. Stuff each pepper with shredded Monterey Jack cheese.

Fry the Rellenos
Heat vegetable oil in a skillet over medium heat. Dip each stuffed pepper in the batter and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes on each side. Drain on paper towels.
Making the Homemade Chorizo

Mix the Ingredients
In a bowl, combine ground pork, paprika, cumin, chili powder, garlic powder, salt, and black pepper. Mix well until thoroughly combined.

Cook the Chorizo
Heat a skillet over medium heat and add the chorizo mixture. Cook for about 8-10 minutes, breaking it up with a spatula until well browned and cooked through.
