Preparation of Enchiladas

Prepare the Filling
In a bowl, combine the shredded chicken, half of the enchilada sauce, chopped onion, and half of the shredded cheese. Mix well until all ingredients are evenly combined.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Take a tortilla, place about 1/3 cup of the chicken filling in the center, and roll it up tightly. Place the rolled tortilla seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the remaining shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Prepare Rice and Beans
While the enchiladas are baking, heat the cooked rice and black beans in a saucepan over low heat until warmed through. Stir occasionally to prevent sticking.

Chop the fresh cilantro for garnish and cut lime wedges for serving.
