Prepare the Chicken
Start by trimming any excess fat from the chicken breasts. Pat them dry with paper towels and season with taco seasoning on both sides. Set aside.

Slice the Vegetables
Slice the bell peppers and onion into thin strips. This will ensure they cook evenly and caramelize nicely.

Preheat the Oven
Preheat your oven to 400°F (200°C) for roasting the vegetables.

Roast the Vegetables
In a large mixing bowl, toss the sliced bell peppers and onion with 1 tablespoon of olive oil. Spread them out on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized.

Cook the Chicken
While the vegetables are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
