    Cook the Shrimp

    In a large pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and transfer the shrimp to a bowl of ice water to stop the cooking process.

    While the shrimp cools, finely chop the red onion, jalapeño, and cilantro. Dice the tomatoes and cucumber.
