Method

Eggs

  1. 1

    Cook the Eggs

In a non-stick skillet, cook the eggs to your desired style—scrambled, fried, or poached. For scrambled eggs, whisk the eggs in a bowl and pour them into the skillet over medium heat, stirring until cooked. For fried eggs, crack the eggs directly into the skillet and cook until the whites are set. For poached eggs, bring water to a simmer in a separate pan and gently slide the eggs in, cooking for about 3-4 minutes.

Beans

  1. 2

    Prepare the Beans

In a saucepan, combine the canned black beans (drained and rinsed), minced garlic, cumin, salt, and pepper. Heat over medium heat until warmed through, stirring occasionally. Adjust seasoning to taste.

Pico de Gallo

  1. 3

    Make Pico de Gallo

Dice the tomato, red onion, and jalapeño (removing seeds for less heat if desired). In a bowl, combine the diced ingredients with chopped cilantro, lime juice, and salt. Mix well and set aside to allow flavors to meld.

Roasted Potatoes

  1. 4

    Roast the Potatoes

Preheat the oven to 425°F (220°C). Cut the potatoes into small cubes, toss them with olive oil, paprika, and salt in a bowl. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through cooking.

Protein

  1. 5

    Cook the Bacon or Chorizo

In a skillet, cook the bacon or chorizo over medium heat until crispy and cooked through. If using chorizo, crumble it into the pan as it cooks.
