Taco Filling

Method

Preparing the Pork

  1. 1

    Marinate the Pork

In a large bowl, combine the pork shoulder, pineapple juice, achiote paste, minced garlic, cumin, oregano, salt, and black pepper. Mix well to ensure the pork is evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Cook the Pork

Preheat your grill or oven to 375°F (190°C). Remove the pork from the marinade and place it on the grill or in a roasting pan. Cook for about 2 to 2.5 hours, or until the pork is tender and easily shreds with a fork. Let it rest for 15 minutes before shredding.

Preparing the Tacos

  1. 3

    Warm the Tortillas

While the pork is resting, heat a skillet over medium heat. Place each corn tortilla in the skillet for about 30 seconds on each side until warmed and slightly toasted. Keep them warm by wrapping them in a clean kitchen towel.

  2. 4

    Assemble the Tacos

Shred the cooked pork and place a generous amount on each tortilla. Top with chopped cilantro, finely chopped onion, and sliced radishes. Add a slice of avocado and serve with lime wedges on the side.
