Marinated Pork

Prepare the Marinade
In a large bowl, combine pineapple juice, apple cider vinegar, chili powder, ground cumin, garlic powder, oregano, salt, black pepper, and lime juice.

Marinate the Pork
Cut the pork shoulder into large chunks and add it to the marinade. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate.

Mix the Salsa
In a medium bowl, combine diced pineapple, red onion, chopped cilantro, jalapeño, lime juice, and salt. Mix well and set aside to let the flavors meld.
Pickled Onions

Make the Pickling Liquid
In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until sugar and salt dissolve.

Assemble the Tacos
Warm the corn tortillas on a skillet or grill until pliable. Fill each tortilla with sliced marinated pork, top with pineapple salsa, and add pickled onions and chopped cilantro.

Serve the tacos with lime wedges on the side for squeezing over the tacos.
