Marinated Pork

Method

Marinating the Pork

  1. 1

    Prepare Marinade

In a large bowl, combine pineapple juice, white vinegar, chili powder, ground cumin, dried oregano, minced garlic, salt, and black pepper. Mix well until combined.

  2. 2

    Marinate the Pork

Cut the pork shoulder into large chunks and add it to the marinade. Ensure the pork is fully coated. Cover and refrigerate for at least 4 hours, preferably overnight for best flavor.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat the oven to 300°F (150°C). Heat olive oil in a large skillet over medium-high heat. Brown the marinated pork chunks on all sides, then transfer to a baking dish.

  2. 4

    Bake the Pork

Cover the baking dish with foil and bake for about 2.5 to 3 hours, or until the pork is tender and easily shredded with a fork. Remove from the oven and let it cool slightly.

  3. 5

    Shred the Pork

Once the pork is cool enough to handle, shred it using two forks. Set aside.

Assembling the Burritos

  1. 6

    Prepare Ingredients

Warm the flour tortillas in a dry skillet or microwave until pliable. Gather all fillings: cooked rice, black beans, chopped cilantro, sour cream, shredded cheese, and salsa.

  2. 7

    Assemble Burritos

On each tortilla, layer a generous amount of shredded pork, followed by rice, black beans, cilantro, sour cream, cheese, and salsa. Fold in the sides of the tortilla and roll tightly from the bottom to form a burrito.

  3. 8

    Serve

Cut the burritos in half and serve with additional salsa and sour cream on the side.
