Sweet Potatoes

Method

Preparing Sweet Potatoes

  1. 1

    Peel and Cut

Peel the sweet potatoes and cut them into even-sized cubes, about 1-inch thick.

  2. 2

    Boil Sweet Potatoes

Place the sweet potato cubes in a large pot and cover them with cold water. Add 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce the heat to medium and let them simmer until fork-tender, about 15-20 minutes.

  3. 3

    Drain

Once cooked, drain the sweet potatoes in a colander and allow them to sit for a few minutes to let excess steam escape.

Making Maple Brown Butter

  1. 4

    Brown the Butter

In a small skillet over medium heat, melt the unsalted butter. Continue to cook, swirling the skillet occasionally, until the butter turns a golden brown color and develops a nutty aroma, about 5-7 minutes.

  2. 5

    Add Maple Syrup and Spices

Remove the skillet from heat and immediately stir in the maple syrup, ground cinnamon, and vanilla extract. Mix well until combined.

Whipping Sweet Potatoes

  1. 6

    Mash Sweet Potatoes

Transfer the drained sweet potatoes to a large mixing bowl. Using a potato masher or electric mixer, mash the sweet potatoes until smooth and creamy.

  2. 7

    Incorporate Brown Butter Mixture

Pour the maple brown butter mixture over the mashed sweet potatoes. Stir well to combine, ensuring that the sweet potatoes are fully coated with the maple brown butter.

  3. 8

    Taste and Adjust

Taste the whipped sweet potatoes and adjust for seasoning with additional salt if desired.
