Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling
In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed just until combined after each addition. Do not overmix.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool slowly in the oven for about an hour.

Chill and Serve
Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight. Run a knife around the edge of the springform pan before releasing the sides. Slice and serve chilled.
