Method

Biscuit Preparation

  1. 1

    Make the Biscuit Dough

In a large bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk and maple syrup until just combined.

  2. 2

    Shape and Bake

Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a 1-inch thick round. Cut out biscuits using a round cutter. Place on a baking sheet and bake at 425°F (220°C) for 12-15 minutes or until golden.

  3. 3

    Griddle the Biscuits

Heat a griddle or skillet over medium heat. Once hot, add the baked biscuits and griddle each side for about 2-3 minutes until crispy and warmed through.

Maple Butter Preparation

  1. 4

    Prepare Maple Butter

In a bowl, mix together the unsalted butter and maple syrup until smooth and well combined.

Seasonal Jam Preparation

  1. 5

    Make Seasonal Jam

In a saucepan, combine seasonal fruit, sugar, and lemon juice. Cook over medium heat until the fruit breaks down and the mixture thickens, about 10-15 minutes. Let cool before serving.
