Marinating Chicken

Prepare the Marinade

In a bowl, mix jerk seasoning, olive oil, lime juice, minced garlic, grated ginger, and salt. Add chicken thighs and coat well. Marinate for at least 2 hours or overnight in the refrigerator.

Slow Cook the Chicken

Place the marinated chicken in a slow cooker and cook on low for 6-8 hours, or until the chicken is tender and fully cooked.

Frying Plantains

Prepare and Fry Plantains

Peel the ripe plantains and slice them diagonally into 1-inch pieces. Heat vegetable oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Making Spiced Mayo

Mix Spiced Mayo

In a small bowl, combine mayonnaise, hot sauce, and lime juice. Mix well and set aside.

Pickling Veggies

Prepare Pickled Veggies

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil. Add julienned carrots and sliced radishes. Remove from heat and let cool. Refrigerate for at least 30 minutes before serving.

Assembly

Assemble the Sandwiches

Slice the sesame hoagie rolls. Layer each roll with slow-cooked jerk chicken, fried plantains, spiced mayo, pickled veggies, and chopped cilantro. Serve immediately.
