Shrimp Preparation

    Marinate the Shrimp

    In a medium bowl, combine the buttermilk with the shrimp. Cover and refrigerate for at least 30 minutes to marinate.

    Prepare the Breading

    In a separate bowl, mix together the cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper.

    Bread the Shrimp

    Remove the shrimp from the buttermilk, allowing excess to drip off, and dredge them in the cornmeal mixture until fully coated.

    Fry the Shrimp

    In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches, frying for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Toast the Buns

    Lightly toast the brioche buns in a toaster or on a skillet until golden brown.

    Assemble the Po Boys

    Spread a generous layer of creole mayo on the bottom half of each toasted bun. Top with field greens, followed by sliced tomatoes, and then add the crispy shrimp. Finally, place the top half of the bun on each sandwich.
