Preparing the Grits

Boil Water
In a large saucepan, bring 4 cups of water to a boil over medium-high heat.

Add Cornmeal
Gradually whisk in 1 cup of cornmeal to the boiling water. Stir continuously to avoid lumps.

Cook Grits
Reduce heat to low and let the grits simmer for about 20-25 minutes, stirring occasionally, until thickened.

Cooking the Shrimp

Heat Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic
Add 3 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

Cook Shrimp
Add 1 pound of shrimp to the skillet. Season with 1 teaspoon of paprika, 1 teaspoon of cayenne pepper, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for 3-4 minutes until the shrimp turns pink and is cooked through.

Add Lemon Juice
Remove the skillet from heat and stir in 2 tablespoons of lemon juice and 1 tablespoon of sliced green onions.
Serving

Spoon the creamy grits onto plates, then top with the sautéed shrimp mixture. Garnish with additional green onions if desired.
