Method

Prepare the Grits

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 teaspoon of salt. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Finish the Grits

    Once the grits are cooked, stir in 1 cup of heavy cream and 2 tablespoons of butter. Mix well until creamy and smooth. Set aside, keeping warm.

Cook the Gumbo

    Sauté the Vegetables

    In a large pot, heat a little oil over medium heat. Add the diced onion, green bell pepper, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add the Sausage

    Stir in the sliced chicken sausage and cook for another 5 minutes, allowing it to brown slightly.

    Add Tomatoes and Broth

    Add the canned diced tomatoes and 4 cups of chicken broth to the pot. Stir well to combine.

    Season the Gumbo

    Add the Cajun seasoning, bay leaves, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes to allow the flavors to meld.

    Add the Seafood

    Finally, add the bay scallops, crawfish, and gulf shrimp to the pot. Cook for an additional 5 minutes or until the seafood is cooked through but not overcooked. Adjust seasoning with hot sauce as desired.

Serve

    Plate the Dish

    Serve the creamy grits in bowls and ladle the seafood gumbo over the top. Garnish with chopped green onions and parsley.
