Pancake Preparation

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients
In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.

Heat the Skillet
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.

Flip and Finish
Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through. Remove pancakes and keep warm.
Cooking the Sides

Cook Bacon or Sausage
In a separate skillet, cook the smoked pork bacon over medium heat until crispy, about 5-7 minutes. Alternatively, cook the chicken sausage links according to package instructions, usually about 10-12 minutes, turning occasionally.

Plate the pancakes and serve with your choice of bacon or sausage, fresh berries, and maple syrup to taste.
