    Prepare the Lobster and Shrimp

    Start by cleaning the lobster tails. Remove the shell and cut the tails into large chunks. Peel and devein the shrimp.

    Chop the Vegetables

    Dice the onion, green bell pepper, and celery. Mince the garlic and slice the okra.

Cooking

    Make the Roux

    In a large pot, heat 1 cup of vegetable oil over medium heat. Gradually whisk in 1 cup of all-purpose flour. Stir continuously until the roux turns a rich brown color, about 20-30 minutes.

    Add Vegetables

    Once the roux is ready, add the diced onion, green bell pepper, celery, minced garlic, and sliced okra. Cook for an additional 5-7 minutes until the vegetables are softened.

    Add Liquids and Seasonings

    Pour in 4 cups of chicken broth, then add 2 tablespoons of Cajun seasoning, 1 teaspoon of thyme, and 2 bay leaves. Season with salt and black pepper to taste. Stir well and bring to a simmer.

    Add Seafood

    Once the gumbo is simmering, add the lobster chunks and shrimp. Cook for 10-15 minutes until the seafood is cooked through.

    Serve

    Ladle the gumbo into bowls and serve hot. You can serve it with rice or crusty bread on the side.
