    Prepare the Dough

    In a bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until bubbly. In a large mixing bowl, combine flour and salt. Pour the yeast mixture and olive oil into the flour. Mix until a sticky dough forms. Cover and let rise for 1 hour in a warm place until doubled in size.

    Make the Syrup

    In a saucepan, combine water, sugar, honey, and lemon juice. Bring to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened. Remove from heat and let cool.

    Fry the Dough Puffs

    Heat oil in a deep fryer or large pot to 375°F (190°C). Using a spoon, drop small balls of dough into the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Serve

    Drizzle the syrup over the warm loukoumathes and sprinkle with chopped walnuts and cinnamon. Serve immediately.
