    Cook the Spaghetti

    In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    In a large skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy, about 5-7 minutes. Remove from heat and set aside.

    Make the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.

    Combine Pasta and Sauce

    Add the hot spaghetti to the skillet with pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Serve immediately with extra Parmesan cheese and black pepper on top.
