    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Sear the Salmon

    In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down, and sear for about 4-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove the salmon from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine and bring to a simmer, scraping the bottom of the skillet to deglaze. Allow the wine to reduce by half.

    Finish the Sauce

    Add the sun-dried tomatoes and unsalted butter to the skillet, stirring until the butter is melted and the sauce is smooth. Adjust seasoning with salt and pepper if necessary.

    Combine and Serve

    Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional minute to heat through. Garnish with chopped parsley and serve immediately.
