    Sear the Lamb

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper, then sear them in the pot until browned on all sides, about 5-7 minutes. Remove the lamb and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Tomatoes and Wine

    Stir in the diced tomatoes, red wine, oregano, and cook for another 2-3 minutes, allowing the alcohol to evaporate.

    Combine Ingredients

    Return the seared lamb shanks to the pot and add the broth. Bring to a boil, then reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the lamb is tender.

    Cook the Orzo

    Once the lamb is tender, remove the shanks and stir in the orzo pasta. Cook for about 10-12 minutes or until the orzo is al dente.

    Final Touch

    Return the lamb shanks to the pot, let it heat through for a few minutes, and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley.
