    Preparation

    Preheat your oven to 325°F (160°C).

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the beef chuck pieces and sear until browned on all sides. Remove the beef and set aside.

    In the same pot, add onions, celery, and carrots. Sauté until the vegetables are soft, about 5-7 minutes. Stir in the garlic and cook for an additional minute.

    Add the tomato paste and stir well, cooking for another 2 minutes.

    Pour in the Guinness stout, scraping the bottom of the pot to deglaze and lift any browned bits. Bring to a simmer.

    Return the beef to the pot, along with the beef broth, bay leaves, thyme, salt, and black pepper. Stir to combine.

    Cover the pot and transfer it to the preheated oven. Braise for 2 to 2.5 hours or until the beef is tender.

    Once done, remove the pot from the oven. Discard the bay leaves before serving.
