Preparation

    Marinate the Beef

    In a bowl, mix olive oil, lemon juice, oregano, salt, and black pepper. Add cubed filet mignon, bell peppers, and onion. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Rice Pilaf

    In a saucepan, bring chicken or vegetable broth to a boil. Add rice, reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked and liquid is absorbed.

    Prepare the Salad

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and feta cheese. In a small bowl, whisk together red wine vinegar, dried basil, and olive oil. Drizzle over salad just before serving.

Grilling

    Skewer the Ingredients

    Preheat the grill to medium-high heat. Thread the marinated beef, bell peppers, and onion onto skewers.

    Grill the Skewers

    Place skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness and vegetables are tender.

Serving

    Serve the grilled souvlaki skewers over a bed of rice pilaf, alongside the mixed greens salad.
