Preparation
1. Prepare the Cheese
Slice the kasseri cheese into 1/2 inch thick pieces and set aside.
2. Prepare Flour
Place the all-purpose flour in a shallow dish for dredging the cheese.
Cooking
3. Heat Olive Oil
In a large frying pan, heat the olive oil over medium-high heat until hot but not smoking.
4. Dredge the Cheese
Coat each slice of kasseri cheese in flour, shaking off any excess flour.
5. Fry the Cheese
Carefully place the floured cheese slices in the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
6. Drain Excess Oil
Using a slotted spatula, remove the fried cheese from the pan and place it on a plate lined with paper towels to drain excess oil.
Serving
7. Plate and Garnish
Transfer the fried cheese to a serving dish. Squeeze fresh lemon juice over the top, and sprinkle with chopped parsley and paprika if desired.
8. Serve Hot
Serve immediately while hot, alongside lemon wedges for additional zest.
