Prepare the Marinade
Make the Marinade
In a large bowl, whisk together olive oil, minced garlic, chopped rosemary, salt, and black pepper.
Marinate the Lamb
Add the lamb chops to the bowl with the marinade. Ensure each chop is well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare Tzatziki Sauce
Grate the Cucumber
Peel and grate the cucumber, then squeeze out excess moisture with a clean kitchen towel.
Combine Ingredients
In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt until well combined.
Chill
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Grill the Lamb Chops
Preheat the Grill
Preheat your grill to medium-high heat.
Grill the Lamb Chops
Remove the lamb chops from the marinade and place them on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
Rest the Lamb
Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes before serving.

Serve the grilled lamb chops with a side of chilled tzatziki sauce and lemon wedges.
