Preparation of Filling

    Rinse Rice

    Rinse 1 cup of long-grain rice under cold water until the water runs clear to remove excess starch.

    Sauté Onion

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Combine Ingredients

    In a large bowl, combine the rinsed rice, sautéed onion, chopped dill, parsley, mint, salt, black pepper, and lemon juice. Mix well to combine all the ingredients.

Stuffing Grape Leaves

    Prepare Grape Leaves

    Carefully remove the grape leaves from the jar, rinse them under cold water, and pat them dry with a paper towel.

    Stuffing Process

    Place a grape leaf, vein side up, on a clean surface. Add about 1 tablespoon of the rice filling near the stem end. Fold the sides over the filling and roll it tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Cooking Dolmadakia

    Prepare Cooking Liquid

    In a large pot, place the stuffed grape leaves seam side down. Pour 2 cups of vegetable broth or water over the dolmadakia. Add 1 tablespoon of olive oil and place lemon slices on top.

    Simmer

    Cover the pot with a lid and bring to a gentle simmer over medium heat. Reduce to low heat and cook for about 40 minutes, until the rice is tender and the grape leaves are soft.

    Rest and Serve

    Once cooked, remove the pot from heat and let the dolmadakia rest for 10 minutes before serving. Serve warm or at room temperature with additional lemon wedges.
