Pork Tenderloin Sandwich
Preparation
1. Prepare the Pork Tenderloin
Trim any excess fat from the pork tenderloin and slice it horizontally to create two even pieces. Pound the pork to about 1/2 inch thickness.
2. Bread the Pork
Set up a breading station with three shallow dishes: one with flour mixed with salt, pepper, garlic powder, and onion powder; one with beaten egg; and one with breadcrumbs. Dredge each piece of pork in flour, dip in egg, and coat with breadcrumbs.
3. Fry the Pork
Heat vegetable oil in a large skillet over medium heat. Once hot, add the breaded pork and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
4. Toast the Buns
In a separate skillet, melt a little butter and toast the hamburger buns until golden brown.
5. Assemble the Sandwich
Place a piece of fried pork on the bottom half of each bun. Add a slice of cheese, if desired, and top with lettuce, tomato, pickles, and any other fixings you prefer. Spread mustard and ketchup to taste.
6. Serve
Close the sandwich with the top half of the bun and serve immediately.
