Moroccan Tagine

Moroccan Tagine

    Sauté Vegetables

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes.

    Add Remaining Ingredients

    Add the diced carrot, zucchini, and red bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally. Then add the chickpeas, vegetable broth, chopped dried apricots, cumin, cinnamon, ginger, salt, and pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, until the vegetables are tender and the flavors have melded together.

    Serve

    Remove from heat and garnish with chopped parsley before serving. Enjoy your Moroccan Tagine!

Chickpea Curry

    Sauté Aromatics

    In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another 2 minutes.

    Add Tomatoes and Spices

    Pour in the crushed canned tomatoes and stir. Add the coconut milk, rinsed chickpeas, cumin, coriander, turmeric, salt, and pepper. Mix well.

    Simmer the Curry

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 20 minutes, stirring occasionally, until thickened.

    Garnish and Serve

    Remove from heat, garnish with chopped cilantro, and serve hot. Enjoy your Chickpea Curry!
