    Prepare Couscous

    In a medium saucepan, bring the vegetable broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes until the couscous has absorbed the liquid.

    Fluff Couscous

    After 5 minutes, uncover the couscous and fluff it with a fork. Drizzle with olive oil and mix well.

    Chop Vegetables

    While the couscous is resting, chop the red bell pepper, cucumber, cherry tomatoes, and red onion into small, bite-sized pieces. Finely chop the fresh parsley.

    Combine Ingredients

    In a large bowl, combine the fluffed couscous with the chopped vegetables and parsley.

    Season the Salad

    Drizzle the lemon juice over the mixture, and add salt and black pepper. Toss everything together until well combined.

Serving

    Divide the salad into 25 portions and serve chilled or at room temperature.
