Preparing the Omelette Mixture

    Beat the Eggs

    In a mixing bowl, crack the 4 large eggs. Add 1 tsp of salt and 1 tsp of black pepper. Whisk the eggs until fully combined and slightly frothy.

    Prepare the Salmon

    Slice the 100 grams of smoked salmon into thin strips or small pieces, ensuring even distribution in the omelette.

    Mix in the Mascarpone

    Add 50 grams of mascarpone cheese to the egg mixture. Stir gently to combine, ensuring not to over-mix.

Cooking the Omelette

    Heat the Pan

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat until it starts to foam but not brown.

    Cook the Omelette Base

    Pour the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes until the edges start to set.

    Add the Smoked Salmon

    Evenly distribute the sliced smoked salmon over one half of the omelette while it is still slightly runny in the center.
