    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the seasoned chicken breasts. Sear for about 6-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Remove from skillet and let rest for a few minutes before slicing.

Ravioli

    Boil the Ravioli

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Once boiling, add the woodland mushroom ravioli and cook according to package instructions, usually about 4-5 minutes until they float to the surface. Drain and set aside.

Tarragon Sauce

    Make the Sauce

    In the same skillet used for the chicken, melt the butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Combine Ingredients

    Stir in the chopped tarragon and cook for another minute. Pour in the heavy cream and lemon juice, stirring constantly. Season with salt and black pepper. Let simmer for 3-4 minutes until the sauce thickens slightly.

Assembly

    Plate the Dish

    On each plate, place a portion of the cooked ravioli. Slice the seared chicken and arrange it on top of the ravioli. Drizzle the tarragon sauce over the chicken and ravioli. Serve immediately.
