Oven-Roasted Chicken

Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels.

Season the Chicken
Rub the chicken with olive oil, salt, black pepper, and fresh thyme. Make sure to get the seasoning under the skin for maximum flavor.

Roast the Chicken
Place the chicken in a roasting pan and roast it in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

Let it Rest
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Cook the Sauce
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.

Add Peppers and Tomatoes
Add the bell peppers to the skillet and cook for about 5 minutes. Then stir in the canned diced tomatoes, paprika, salt, and black pepper. Simmer for 15-20 minutes until the sauce thickens.
