    Prepare the Vegetables

    Finely chop the onion and tomato. Rinse the spinach under cold water, then pat dry and roughly chop.

    Whisk the Eggs

    In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Cooking

    Sauté the Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Then add the chopped tomato and spinach, and cook for another 2-3 minutes until the spinach wilts.

    Add Egg Mixture

    Pour the egg mixture over the sautéed vegetables in the skillet. Allow the eggs to cook undisturbed for about 2-3 minutes until the edges begin to set.

    Add Gruyère Cheese

    Sprinkle the gruyère cheese evenly over the top of the omelette. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese melts and the eggs are fully set.

    Serve

    Gently slide the omelette onto a plate and cut it in half or quarters. Serve hot, optionally garnished with additional spinach or herbs.
