Method

Lobster Filling

    Prepare the Lobster Filling

    In a large mixing bowl, combine the lobster meat, mayonnaise, celery, lemon juice, dill, salt, and black pepper. Stir gently until well mixed. Cover and refrigerate if using for cold rolls.

Lemon Butter (for Hot Lobster Roll)

    Make the Lemon Butter

    In a small saucepan, melt the unsalted butter over low heat. Add the lemon juice and minced garlic, stirring until combined. Remove from heat and set aside.

Lemon Aioli (for Cold Lobster Roll)

    Prepare the Lemon Aioli

    In a small bowl, mix together the minced garlic, mayonnaise, lemon juice, salt, and black pepper until smooth. Set aside.

Brioche Buns

    Toast the Brioche Buns

    In a skillet, melt the unsalted butter over medium heat. Split the brioche rolls in half and place them cut side down in the skillet. Toast until golden brown.

Belgian Frites

    Prepare the Belgian Frites

    Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Carefully add the cut potatoes in batches and fry until golden and crispy, about 5-7 minutes. Use a slotted spoon to remove the fries and drain on paper towels. Season with salt to taste.

Assemble the Lobster Roll

    Combine and Serve

    For hot lobster rolls, warm the lobster filling in a saucepan and drizzle with lemon butter before serving it in the toasted brioche buns. For cold lobster rolls, fill the toasted brioche buns with the lobster filling and drizzle with the lemon aioli. Serve the lobster rolls alongside the Belgian frites.
