Prepare the Broth

Clean the Lobster Shells
If using whole lobsters, crack the shells to expose the insides. Rinse the shells under cold water to remove any debris.

Chop Shallots and Garlic
Peel and roughly chop the shallots and garlic cloves.

Add Lobster Shells and Water
Add the lobster shells to the pot and stir well to combine. Pour in 4 cups of water and bring to a boil.

Simmer the Broth
Once boiling, reduce the heat to low and let the broth simmer for about 30 minutes. This will extract flavors from the shells.

Strain the Broth
After simmering, strain the broth through a fine mesh sieve into another pot, discarding the solids. You should have a rich lobster broth.

Add White Wine and Lemon
Return the strained broth to the heat. Stir in 1 cup of white wine and squeeze the juice of 1 lemon into the pot. Bring to a gentle simmer for an additional 10 minutes, allowing the flavors to meld.
