Method
Preparing the Potatoes
- 1
- 2
Soaking the Potatoes
Place the cut potato sticks into a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps achieve a crispier texture.
Frying the Potatoes
- 3
Heating the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 325°F (165°C). You can use a thermometer to check the temperature.
- 4
First Fry
Remove the potatoes from the water and drain them well. Pat them dry with a clean kitchen towel. Carefully add a batch of potato sticks to the hot oil, ensuring not to overcrowd the pot. Fry for about 4-5 minutes until they are soft but not browned. Remove with a slotted spoon and drain on paper towels.
- 5
Second Fry
Increase the oil temperature to 375°F (190°C). Once the oil is hot, add the fried potato sticks back into the pot in batches, frying for an additional 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels again.
Seasoning and Serving
- 6
Seasoning the Frites
While the frites are still hot, sprinkle them with salt and black pepper to taste. Toss them gently to ensure even coverage.
- 7
Serving
Serve the homemade Belgian frites immediately with your favorite dipping sauces, such as mayonnaise, aioli, or ketchup.
