    In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and green bell pepper (the Holy Trinity) and sauté until softened, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Incorporate Potatoes and Corn

    Add the diced potatoes and sweet corn to the pot, stirring to combine with the sautéed vegetables.

    Pour in the vegetable broth, season with salt and black pepper, and bring the mixture to a boil. Reduce heat and simmer for about 15 minutes, or until the potatoes are tender.

    Using an immersion blender, blend the mixture until smooth. Alternatively, you can carefully transfer the soup to a traditional blender in batches.
