Method

Frying Calamari

    Prepare the Calamari

    Rinse the cleaned squid under cold water and pat dry with paper towels. Cut the squid into rings about 1/2 inch thick and keep the tentacles intact.

    Prepare the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well until evenly combined.

    Coat the Calamari

    Dredge the calamari rings and tentacles in the flour mixture, ensuring they are well coated. Shake off any excess flour.

    Heat the Oil

    In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of the flour mixture; if it sizzles, the oil is ready.

    Fry the Calamari

    Carefully add the calamari to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Making Old Bay Aioli

    Combine Ingredients

    In a medium bowl, combine mayonnaise, minced garlic, lemon juice, and Old Bay seasoning.

    Season the Aioli

    Mix the ingredients well until smooth. Taste and season with salt and black pepper to your liking.

    Chill and Serve

    Cover the aioli with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
