Method

Preparation

  1. 1

    Boil the Eggs

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat.

  2. 2

    Cook the Eggs

Once the water reaches a rolling boil, cover the saucepan and remove it from the heat. Let the eggs sit for 12-14 minutes.

  3. 3

    Cool the Eggs

After the cooking time, transfer the eggs to a bowl of ice water and let them cool for about 5-10 minutes.

  4. 4

    Peel the Eggs

Once the eggs are cool, gently tap them on a hard surface and peel off the shell under running water for easier removal.

Filling Preparation

  1. 5

    Prepare the Filling

Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Set the egg whites aside.

  2. 6

    Mix the Yolk Mixture

To the bowl with the yolks, add mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and smoked paprika. Mash the mixture until smooth and well combined.

  3. 7

    Fill the Egg Whites

Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

  4. 8

    Garnish

Sprinkle the filled eggs with additional smoked paprika and garnish with chopped chives or parsley.
