Method

Preparation of Veloute

  1. 1

    Melt Butter

In a large saucepan, melt the butter over medium heat until it is bubbly and foamy.

  2. 2

    Add Flour

Once the butter is melted, gradually whisk in the all-purpose flour to create a roux. Continue to whisk for about 2-3 minutes until the mixture is smooth and lightly golden.

  3. 3

    Incorporate Broth

Slowly pour in the chicken or vegetable broth while continuously whisking to prevent lumps from forming. Bring the mixture to a gentle simmer.

  4. 4

    Thicken the Sauce

Allow the sauce to simmer for about 10-12 minutes, or until it has thickened, stirring occasionally.

  5. 5

    Add Heavy Cream

Stir in the heavy cream and continue to cook for another 5 minutes, allowing the flavors to meld together.

Flavoring the Veloute

  1. 6

    Season the Sauce

Add the curry powder, ground cumin, salt, black pepper, garlic powder, and ginger powder to the veloute. Stir well to incorporate all the spices.

  2. 7

    Simmer

Let the sauce simmer for an additional 5-7 minutes on low heat, adjusting the seasoning to taste.

Serving the Veloute

  1. 8

    Garnish and Serve

Ladle the curried veloute into serving bowls. If desired, garnish with fresh cilantro and serve with lime wedges on the side.
