Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour and salt.

  3. 3

    Form Dough

Create a well in the center of the flour mixture. Pour in the activated yeast mixture and mix until a dough forms.

  4. 4

    Knead Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  5. 5

    Let Dough Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Filling Preparation

  1. 6

    Sauté Spinach

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool.

  2. 7

    Mix Filling

In a mixing bowl, combine ricotta cheese, sautéed spinach, grated Parmesan cheese, nutmeg, and black pepper. Mix well until combined.

Assembly and Baking

  1. 8

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 9

    Roll Out Dough

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a large rectangle.

  3. 10

    Add Filling

Spread the filling mixture evenly over the rolled-out dough, leaving a small border around the edges.

  4. 11

    Roll and Cut

Roll the dough tightly into a log. Cut the log into 1-inch slices and place them in a greased baking dish.

  5. 12

    Add Sauce and Cheese

Pour the tomato sauce over the rolled slices. Sprinkle shredded mozzarella cheese on top.

  6. 13

    Bake

Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.

Finishing Touches

  1. 14

    Garnish

Remove from the oven and let cool slightly. Garnish with chopped fresh basil before serving.
