Preparing the Seafood

Sauté the Seafood
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the minced garlic and chopped shallot, sauté until fragrant, about 2 minutes. Add the shrimp, mussels, squid, and bay scallops. Season with salt and black pepper. Cook until the shrimp are pink and the mussels open, about 5-7 minutes. Remove the seafood from the skillet and set aside.

Prepare the Creamy Lobster Broth
In the same skillet used for the seafood, add the remaining tablespoon of butter. Once melted, pour in the lobster stock and bring to a simmer. Stir in the heavy cream, and continue to simmer for an additional 5 minutes until slightly thickened. Adjust seasoning with more salt and pepper if needed.
