    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips, about 1/2 inch wide. Place the cut potatoes in a bowl of cold water to remove excess starch. Let them soak for at least 30 minutes.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 325°F (160°C) over medium heat. Use a thermometer to ensure the temperature is correct.

    First Fry

    Once the oil is hot, drain the soaked potatoes and pat them dry with paper towels. Carefully add the potatoes to the hot oil in batches, frying for about 5-6 minutes until they are tender but not browned. Remove with a slotted spoon and drain on paper towels.

    Raise the Oil Temperature

    Increase the temperature of the oil to 375°F (190°C).

    Second Fry

    Fry the potatoes again in batches for an additional 3-4 minutes until they are golden brown and crispy. Remove and drain on fresh paper towels.

Serving

    Season and Serve

    Sprinkle the hot frites with salt and paprika to taste. Serve immediately with your choice of dipping sauces.
