Prepare the Tartlet Crust

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

Cut in Butter
Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Cold Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

Chill the Dough
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Apple Filling

Slice Apples
While the dough is chilling, peel and thinly slice the apples.

Mix Filling Ingredients
In a bowl, combine the sliced apples, brown sugar, cinnamon, lemon juice, and vanilla extract. Toss until the apples are well coated.
Assemble and Bake

Preheat Oven
Preheat your oven to 375°F (190°C).

Roll Out Dough
On a floured surface, roll out the chilled dough to fit your tartlet pans. Press the dough into the pans, trimming any excess.

Fill with Apples
Evenly distribute the apple filling into each tartlet shell.

Bake Tartlets
Bake in the preheated oven for 25-30 minutes or until the apples are tender and the crust is golden brown.

Remove from the oven and let the tartlets cool for a few minutes before serving.
