Preparing the Dough
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together until well blended.
Incorporate Shortening
Add the shortening to the dry mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
Add Water
Gradually add warm water to the flour mixture. Stir with a fork until the dough comes together, then knead it on a floured surface for about 2-3 minutes until smooth.
Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes at room temperature.
Frying the Sopapillas
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of dough into it; it should bubble and rise to the surface.
Roll Out the Dough
On a lightly floured surface, roll out the rested dough to about 1/8 inch thick. Cut the dough into squares or triangles, about 3 inches on each side.
Fry the Dough
Carefully drop the cut pieces of dough into the hot oil, a few at a time. Fry for about 1-2 minutes on each side, or until they puff up and turn golden brown.
