Preparation of Vegetables

Chop the Cabbage
Remove the outer leaves of the green and red cabbage. Cut each cabbage in half, remove the core, and thinly slice the leaves into shreds. Measure out 4 cups of green cabbage and 2 cups of red cabbage.

Grate the Carrots
Peel the carrots and grate them using a food processor or a box grater until you have about 2 cups of grated carrots.

Prepare the Bell Pepper (Optional)
If using, wash, core, and thinly slice the bell pepper into strips. Measure out 1 cup of sliced bell pepper.
Making the Dressing

Combine Dressing Ingredients
In a medium bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk together until smooth and well combined.
Mixing the Slaw

Combine Vegetables and Dressing
In a large bowl, add the shredded green cabbage, red cabbage, grated carrots, and sliced bell pepper (if using). Pour the dressing over the vegetables.

Using tongs or your hands, toss the vegetables and dressing together until everything is evenly coated.

Cover the slaw with plastic wrap or a lid and refrigerate for at least 30 minutes before serving. This allows the flavors to meld.
