    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well mixed. Gradually pour in the cold sparkling water while whisking to create a smooth batter. The batter should be thick enough to coat the onion rings.

    Heat the Oil

    In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

    Dip each onion ring into the batter, allowing excess batter to drip off. Carefully place the battered onion rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
