Potato Preparation

Method

Potato Preparation

  1. 1

    Wash and Peel Potatoes

Thoroughly wash the Russet potatoes under cold running water. Peel the skin off using a vegetable peeler.

  2. 2

    Cut Potatoes into Fries

Cut the peeled potatoes into even sticks, approximately 1/4 inch thick.

  3. 3

    Soak Potatoes

Place the cut fries into a large bowl and cover them with cold water. Add 1 tsp of salt and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

  4. 4

    Drain and Dry

After soaking, drain the fries in a colander and pat them dry with paper towels to remove excess moisture.

Frying

  1. 5

    Heat Oil

In a large heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer for accuracy.

  2. 6

    Fry the Potatoes

Carefully lower a batch of the dried fries into the hot oil using a slotted spoon. Do not overcrowd the pot. Fry for about 4-5 minutes until they are golden and crispy.

  3. 7

    Remove and Drain

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Repeat with the remaining fries.

  4. 8

    Season and Serve

While the fries are still hot, sprinkle with additional salt to taste. Serve immediately with your favorite dipping sauces.
